Kitchens Edge

My Bachelor project. A knife for the starters of cooking with little to no previous knowledge. Kitchen’s Edge is a knife created to last, you learn to take care of it while using it as well as sharpening it. The edge of the knife has the known Scandinavian-grind angle, easy to align up to a sharpening stone and gives you a clear feedback in sound & feel when you sharpen it.

 

The knife is my solution of getting to know how to sharpen and taking care of the knife with little previous knowledge. The steel is hardened with a Hamon which gives a patterned hardening of the blade that gives a subtle but aesthetic touch to the knife. The Hamon is also unique for each knife, like our fingerprints and makes the blade more resistant to damage when hitting things such as bones.

 

As illustrated, the knife is a full tang knife where the focus is to utilize the steel as long as possible, which I have given bot the tang and knife blade the possibility to alter the shape and size according to the age and mass of the knife.

As a student, I moved away from family and friends and needed kitchenware. Price was a concern and I got a cheap knife as example. It was good, but got duller with time and I had no idea how to sharpen them. While researching sharpening of knives, I found 2 methods that worked the best for me and that was a ceramic sharpening rod and wet stones. But learning to use them needed some guidance or videos. The knife where the up for debate, what is needed of shapes to naturally understand the angle?

 

The knife has taken many shapes and materials before the final model. Interactions, tests and discussions with different people where done under each step where preferences and the aesthetic were of debate. As I wanted to make each knife unique I decided that the natural aesthetics of each material should shine to make the knife unique. This worked out nicely on the final model where the Hamon often blade shined trough with a harmony of the blade.
